- You need 1 pack of kepala salmon dan tulang2nya.
- It's 1 pack of tofu, potong kotak-kotak.
- You need 3 lembar of sawi putih, potong kecil.
- Prepare 1,5 sdm of miso putih, larutkan.
- It's 1/4 pack of jamur shimeji, potong akarnya.
- You need 2 buah of jamur shitake, iris.
- It's 1 batang of bawang daun, iris.
- It's 1/2 of bawang bombay, iris.
- It's 1 siung of bawang putih, geprek.
- You need 1 cm of jahe, geprek.
- Prepare 1 sdm of mirin (bisa di skip).
- Prepare 1 sdt of kaldu jamur.
- It's 2 buah of jeruk nipis, peras airnya.
- It's 1/2 sdt of lada hitam bubuk.
- You need 500-600 ml of air.
- Prepare 1 sdm of olive oil.
- You need 3 lembar of kecil rumput laut kering.

- Cuci bersih salmon, potong-potong, lalu beri jeruk nipis, 1 sdm mirin, lada hitam, lalu disimpan di kulkas +/- 30 menit..
- Potong-potong dan cuci bersih bahan pelengkap sesuai selera, keluarkan salmon dari kulkas lalu bilas..
- Tumis jahe, bawang bombay, bawang putih dengan olive oil sampai harum, lalu masukkan salmon yg sudah dibilas, beri 1 sdm mirin lagi, aduk lalu masukkan air dan rumput laut, beri kaldu jamur dan lada hitam lalu masak dengan api kecil sampai mendidih. Saya angkat buih2 putihnya supaya tdk amis..
- Larutkan miso dengan sedikit air panas, setelah benar-benar larut masukkan larutan tersebut ke kaldu salmon dan biarkan mendidih..
- Setelah mendidih masukkan tofu, jamur, dan sawi, koreksi rasa, lalu supaya sayuran tidak overcooked masak selama 1 menit saja dan matikan api, terakhir masukkan bawang daun..
- Sajikan selagi panas dengan nasi hangat. Bila suka pedas bisa pakai boncabe 😁 seperti saya..
- Note: Salmon akan mengeluarkan lemak2 yg berwarna putih, sebaiknya lemak2 itu diangkat menggunakan saringan kecil agar kaldu tidak amis..
